All-Fellow Pour-Over Setup: What to Buy and How to Brew

A balanced all-Fellow pour-over station starts with an Ode Gen 2 grinder, Stagg EKG Pro kettle, Stagg [X] brewer and Tally Pro scale. Add an Atmos canister for bean storage if you want the matching accessory. The useful part is the workflow: measured beans, controlled water temperature, a repeatable pour and a recorded recipe.

This guide is a researched equipment plan and an example starting recipe, not a claim that we tested a sponsored kit. As an Amazon Associate, we earn from qualifying purchases. Each product link below was checked for the named model; selected variants and availability can change.

Buy for your serving size first

Stagg [X] and Stagg [XF] are different dripper sizes with different matching filters. The X is suited to a smaller brew; the XF accommodates a larger one. Do not buy replacement XF paper for an X brewer just because the product names are similar. The linked X set is also distinct from the standalone X dripper, which does not provide the same full serving setup.

If you already have a stable mug or server that fits your dripper, you can use the standalone Stagg [X] dripper instead of duplicating glassware. Check that the brewer sits securely and that the vessel can hold the total drink. Do not balance a dripper on an opening that is too narrow or unstable.

Why Stagg instead of Corvo?

Stagg EKG Pro has the gooseneck spout that makes deliberate, slower pours easier to manage. Corvo EKG Pro has a wide spout intended for quick pouring and all-purpose use, including tea. They are related temperature-controlled kettles with different jobs. A Corvo can heat brewing water, but it does not provide the same controlled flow for a manual pour-over.

The Stagg Pro holds 0.9 liters. Fill within the minimum and maximum marks and account for water used to rinse filters. Use the temperature guidance for your coffee as a starting point; keep the kettle on a stable surface and handle steam and hot glassware carefully.

Ode or Opus for this station?

Ode Gen 2 is a straightforward choice for a dedicated filter station. It has stepped adjustment and does not support espresso. If you also make espresso, substitute Opus 2 rather than buying an Ode and expecting espresso capability later. Our Ode Gen 2 versus Opus 2 comparison explains the current model differences.

There is no need to replace working equipment merely to match the color scheme. A scale you already own and a compatible server can lower the initial expense. An all-Fellow arrangement is a coherent premium setup, but matching branding is not itself a brewing requirement.

A practical one-cup starting recipe

Try 18 g coffee and 288 g water for a 1:16 starting ratio, within the intended small-brew use of the Stagg X. This is a suggested baseline, not Fellow’s universal prescription or a tested recipe from our kitchen. Check your specific brewer’s directions and serving capacity before increasing the batch.

Rinse the correct X paper filter, discard the rinse water, and place the brewer and server on the scale. Grind the 18 g dose using the grinder’s supplied pour-over guidance. Add the grounds, level the bed gently and tare the scale. For medium-roast coffee, around 200°F is a reasonable initial water-temperature choice; follow your roaster’s advice if available.

Wet the grounds evenly with about 50 g water and allow roughly 30 seconds for the bloom. Continue adding water in controlled pulses toward 288 g total. Keep the stream over the coffee bed rather than washing the walls. Record the drawdown time and taste after the cup cools enough to assess. Avoid treating a target brew time as more authoritative than the result in the cup.

Use Tally to repeat the recipe

Brew Assist lets you choose a ratio and guides the water target from the measured coffee. Weight and timer modes also let you follow a recipe directly. A scale is valuable because a spoonful of light-roast coffee can weigh differently from a spoonful of dark-roast coffee; measured grams remove that uncertainty.

If a cup is thin and drains unusually quickly, try one finer grinder step. If it is harsh and slow, try coarser. Keep the coffee and water quantities stable while experimenting. Water, roast and pouring technique also affect flavor, so change one variable at a time and write down what you did.

Storage and cleaning

Atmos is optional. The linked 0.7 L canister is the manual vacuum version, so it should not be described as self-maintaining or rechargeable. Store whole beans in a clean, dry container and follow Fellow’s instructions for renewing the vacuum. Do not put grounds or powders in a vacuum mechanism unless the manufacturer explicitly permits it.

Let the brewer cool before cleaning. Follow the separate instructions for the kettle, scale and grinder; keep water out of electrical components. A matching brew bar has several devices, so plan counter clearance, dry storage for filters and access to power outlets before purchasing.

When automatic brewing is a better fit

If the appeal is precision but you rarely have time to pour manually, compare this station with Fellow Aiden. Aiden still needs a separate grinder but handles the brew-water delivery. Manual Stagg brewing suits the person who enjoys pouring; Aiden suits the person who wants configurable filter coffee with less hands-on work.

Model compatibility was checked using Fellow’s Stagg dripper page, Tally page, and Ode Gen 2 specifications. Product-specific Amazon destinations distinguish X from XF, Pro from Studio, and manual Atmos from Electric Atmos.
